A payment link over text, for the customer who never opens email.

Invoice the deposit, then the balance, against the same job rather than as two unrelated documents.

Whose Stripe account is it?
Yours. You connect your own, and payments settle to you. We are not in the middle of your money.
Can I use QuickBooks instead?
Yes, and many roofers should, because it is already where their books are. QuickBooks invoices carry their own pay link.
Do I have to put in every line item?
Only as much detail as you want. A one line invoice is fine, and so is a full breakdown with tax.
Does it chase unpaid invoices?
It shows you what is outstanding on the job. Chasing is still a decision a person makes, because a roofing company knows which customers to push and which to leave alone.
